Bone Broth or as I like to call it liquid gold
Bone broth is packed full of vitamins, minerals and collagen. This nutrient dense elixir supports our bones, joints, gut, skin and brain health. In alternative medicine, bone broth is actually used to heal a leaky gut. It is a staple in my household and we not only consume it on its own, but also add it to sauces, curries and rice for that added nutrition.
Ingredients
The carcass of 1 whole roasted organic chicken*
2 bulbs of garlic
4 stalks of celery
2 whole carrots
2 big onions ( you can use brown, yellow or even red onions)
2 tbsp apple cider vinegar
1 tbsp sea salt
6-8 whole peppercorns
1 bay leaf
1.5 Litre of water
Method
Take your onions, garlic, celery and carrots and give them a rinse to remove any dirt.
Roughly chop the celery and carrots into big chunks. Slice the onion and garlic down the middle into halves with skin still on.
In your stock pot add the roasted bones or carcass, celery, carrots, onions and garlic.
Add your sea salt , peppercorns and bay leaf. Fill the pot with water until its full.
Bring the water to a boil on medium heat, then add in the apple cider vinegar.
Reduce the heat to low and let this simmer uncovered for for 10-12 hours. Occasionally removing any foam that appears on the surface of the broth.
Strain the broth, pour it into jars or containers. You can store this in the fridge for up to 5 days or in the freezer for up to 6 months.
If consuming immediately add some sea salt, turmeric and fresh cracked pepper to the broth and finish off some a squeeze of lemon. This is just the perfect heart warming hug in a mug.
