Hydrating Coolers, Spritzers and Elixers

Here are some of my favourite summer coolers, spritzers and elixirs. Each one of them is packed full of nutrients and is an excellent source of hydration on those hot summer days.

Ginger Mint Lemonade

Ingredients

  • 1/4 cup lemon juice

  • 2 whole lemons sliced

  • I bundle of mint (8-10 springs) thoroughly washed and roughly torn

  • 2 thumbs of ginger ( around 2 inches) thinly sliced

  • 3 tbsp agave syrup

  • 1 litre water

Method

  • In a jug add the lemon juice, agave syrup, lemon slices, mint and ginger.

  • Take a wooden spoon and muddle everything together so that the flavours of the ginger and mint are infused.

  • Add in the water and mix well. Taste to see if you need to adjust the sweetness.

  • Serve over lots of ice and enjoy this anti inflammatory take on a classic lemonade.

Grapefruit Rosemary Spritzer

Ingredients

  • 2 grapefruit juiced

  • 1/4 cup of fresh pineapple chunks

  • 2 springs of fresh rosemary

  • 500ml of sparkling water

Method

  • Blend the grapefruit juice and pineapple chunks together.

  • Strain the juice and add it to a jug.

  • Add in the fresh rosemary, you can tear it a little so the flavour get infused.

  • Take a wooden spoon and muddle everything together.

  • Pour into 2 glasses, the juice should come up half way in each glass.

  • Top with sparkling water and ice.

  • Enjoy on a warm summer day.

Watermelon Coconut Lime Elixir

Ingredients

  • 2 cups diced watermelon (seeds taken out)

  • 2 cups coconut water

  • 2 limes juiced

  • 2 tbsp chia seeds

  • 2/3 springs of fresh mint

Method

  • Blend the coconut water and diced watermelon together.

  • Strain the juice into a jug.

  • Add lime juice and mint leaves, mix well.

  • If the juice feels thick and smoothie like, add some more coconut water just to get a juice like consistency.

  • Stir in the chia seeds.

  • Serve immediately over lots of ice.
