Growing up, oatmeal was always a staple breakfast in our household, especially during those cold winter mornings. I always imagined this cinnamon oatmeal to taste exactly like the one goldilocks would have, or maybe thats what my mom told us so we would finish our bowls . This recipe is my childhood oatmeal upgraded with a creamy cashew milk, rich maple syrup and the perfect amount of cinnamon.

Makes 2 portions

Ingredients :

  • 1/2 cup organic rolled oats

  • 1/2 cup water

  • 1/2 cup milk of cashew milk

  • 1 tablespoon of maple syrup

  • 1/2 teaspoon cinnamon

Method:

In a saucepan mix the oats and water and on a low heat bring to a boil. Once it comes to a boil add the cinnamon, and cashew milk. I like to rigorously stir the oatmeal to get a creamy consistency. Add more milk if needed and at the end add in the maple syrup. Divide the oatmeal into two bowls and drizzle some more maples syrup and sprinkle on some cinnamon.

I like to use this oatmeal as a base to build flavours on. For the extra nutrients, I’ll add in a mix of seeds and nuts, some dried or fresh fruit and even some nut butter. This nutrient dense oatmeal with cinnamon helps maintain blood sugar levels throughout the day and is a heart healthy breakfast option.
